Tuna Double-Cheese Burgers

Made from Clover Leaf Flaked White Tuna, a mouth-watering burger for dinner thats sure to appeal to the kid in everyone!

Ingredients

2 2 eggs
1/3 cup 75 mL dry bread crumbs
2 tbsp 30 mL each finely chopped dill pickles and green onion
1/4 tsp 1 mL each salt and pepper
2 cans 170 each Clover Leaf Flaked White Tuna, drained
1/2 cup 125 mL shredded Cheddar cheese
1 tbsp 15 mL vegetable oil
4 4 slices Cheddar cheese
4 4 whole wheat Kaiser or hamburger buns
Additional dill pickles (optional)
Lettuce, sliced tomato and red onion (optional)

Beat eggs and mix in crumbs, pickles, green onion, salt and pepper. Crumble in the tuna and add the shredded cheese; toss to combine. Form mixture into four equal-sized patties, each about 1/2-in (1 cm) thick.


Chill for 15 minutes.


Heat the oil in a large, nonstick skillet set over medium heat. Add the tuna patties without crowding the pan. Cook for 3 to 5 minutes per side, or until lightly browned. Top each patty with a cheese slice. Cover the pan and remove from the heat. Let stand for 2 minutes or until the cheese is melted.


Transfer patties to buns and top with pickles, lettuce, tomato and onion (if using).


Makes 4 burgers.





Tip: To cook the patties on the grill: Preheat the grill to medium and grease well. Cook the patties for 3 minutes per side or until lightly browned. Add the cheese slices during the last minute of cooking.

Are you a Fat Buster? Do you avoid buying foods that are high in saturated fats and cholesterol? When you go grocery shopping, do you read “Nutrition Facts” panels for assistance in selecting healthy foods for your family? If so, I have great news for you! As of January 1, 2006, the FDA requires that manufacturers list the amount of trans fats on Nutrition Panels.

Why do you need to know this? The shocking truth is that trans fats have always lurked in our foods, unpublicized. Manufacturers make trans fat when they add hydrogen to vegetable oil — a process called hydrogenation that turns liquid oils into solid fats like shortening and hard margarine. Hydrogenation increases the shelf life and flavor stability of foods containing these fats. With no way to measure trans fats, careful shoppers like you and I have been buying foods laden with them.

Why should you care about trans fat? What harm does it do? Trans fat, like saturated fat and dietary cholesterol, raises the LDL cholesterol that increases your risk for coronary heart disease. Although saturated fat is the main dietary culprit that raises LDL, trans fat and dietary cholesterol also contribute significantly.

Why do health books recommend that we include fat in our diets if it’s so bad for us? When eaten in moderation, fat is important for proper growth, development, and maintenance of good health as it is a major source of energy for the body and aids in the absorption of vitamins A, D, E, and K as well as carotenoids. In addition, as any good cook knows, fat provides taste, consistency, and stability and helps give us that happy, full-tummy feeling.

However, there are “good” fats and “bad” ones, just as we have good and bad blood cholesterol. Saturated fat and trans fat raise LDL cholesterol levels in the blood, thereby increasing the risk of heart disease. Polyunsaturated fats and monounsaturated fats (such as olive oil, canola oil, soybean oil, and corn oil) do not raise LDL cholesterol and are beneficial when consumed in moderation.

In which foods does trans fat lurk? Mainly trans fats are found in vegetable shortenings, some margarines, crackers, cookies, snack foods, candies, salad dressings, baked goods, and other foods made with or fried in partially hydrogenated oils. You know . . . all your favorite foods.

Even some dietary supplements like energy and nutrition bars contain trans fat from partially hydrogenated vegetable oil as well as saturated fat or cholesterol. Up until now, you had no way to identify the levels of trans fat in your foods, but now you are able to identify the amounts of all three fats in your foods.

When making food choices that will be low in saturated fat and cholesterol, remember that the combined totals of saturated and trans fats along with cholesterol should be low . . . 5% of the Daily Value or less is low and 20 % or more is high. I want to assure you that trans fats, although present in many of the foods we eat, are not “essential” to any healthy diet. . Numerous health and government authorities, including the U.S. Surgeon General, the National Academy of Sciences, the American Heart Association and the American Dietetic Association, advocate reducing dietary fat to 30 percent or less of total calories.

If you are sadly crossing your favorite foods off your grocery list, you may be wondering what you can serve instead. Fear not, you still have a few good choices left:

• Monounsaturated and polyunsaturated fats do not raise LDL cholesterol levels and you can eat them, in moderation. Sources of monounsaturated fats include olive and canola oils. Natural vegetable oils (such as olive, canola, peanut, corn, soybean, safflower, and sunflower oils) have no trans fats and are high in good fats.

• Select alternative fats: olive, canola, soybean, corn, and sunflower oils, soft margarines, nuts and fish, lean meats and skinless poultry.

• Feel free to serve your family fish, as most fish are lower in saturated fats than meat. Some fish, such as mackerel, sardines, and salmon, contain omega-3 fatty acids help fight against heart disease.

• Serve a healthy, balanced diet with lots of fruits and vegetables, whole grain breads, cereals, and pastas, chicken and fish, non-fat or low-fat dairy products. If you cook at home, select lots of fruits and vegetables, whole grain breads, cereals, and pastas. Choose non-fat or low-fat dairy products and foods that have a low % of bad fats.

Cooking your own meals helps you better control the type and amount of fats you eat.However, if eating out is one of the great joys of your life, don’t despair. You can still cut down on trans fats when eating out by eating less fast food and by asking before you order in a restaurant if they will cook your food in natural vegetable oils. If you choose wisely, avoiding fried foods, for example, you can eat out and still have healthy meals.

Avoiding trans fats does provide another benefit that I think you will enjoy! Fats are high in calories; 9 calories per gram, making fat the most concentrated source of calories. By comparison, carbohydrates and protein have only 4 calories per gram. Therefore, replacing harmful fats with healthy foods will naturally result in dropping a few pounds of “ugly fat” and reduce your tendency for health problems.

Now that manufacturers must reveal the presence of the ghostly trans fats on nutrition labels, become the “Fat Buster” for your family and enjoy the multiple benefits of healthier eating.

Wisdom Teeth Part I: About Wisdom Teeth

Wisdom teeth also known as third molars are the last teeth to erupt. Wisdom teeth may become a problem for you as they grow and develop in each corner of your mouth. Problems often develop gradually since development normally spans several years. Nevertheless, these gradual changes can cause sudden and severe pain. Understanding why such things can happen may help you to deal with these problems, or better still, to encourage you to take preventive measures before they occur.

The jawbone grows to approximately its adult size by your late teens. Unfortunately, that size is often too small to hold developing wisdom teeth. This happens because our jaws are smaller than those of early humans who needed large jaws and more teeth for their tougher diet.

When there is not enough room for your wisdom teeth, they may become impacted, or partially trapped in the jawbone and gums. The crown, or top of the tooth, may erupt, or just break through the gum, or it may remain completely within the bone. The roots can grow in unusual directions and may cause a variety of problems in your mouth and with your sinus cavity or the nerve in your lower jaw. The primary preventive measure for wisdom teeth is removal, preferably at an early stage.

Impacted Wisdom Tooth

A tooth becomes impacted due to lack of space in the dental arch and its eruption is therefore prevented by gum, bone, another tooth or all three. Lack of space occurs because our jaws have become smaller through evolution. We do not lose teeth through decay as frequently as in the past and our diet does not wear down our teeth as much.

Impacted wisdom teeth can grow in a variety of directions. A wisdom tooth may grow toward your other teeth, away from them, or even in horizontal or vertical positions. When such conditions occur, it’s far simpler and less painful to have them removed early before they have a chance to firmly anchor in your jaw as the teeth grow and the roots lengthen.

Wisdom Tooth Assessment

Not everyone has problems with their wisdom teeth. Factors that determine whether you will have problems include the size of your jaw and how your wisdom teeth grow in. There may be pain and swelling, or you may have no symptoms at all even though the other teeth in your mouth may be at risk of damage. In addition to actual pain, common problems caused by wisdom teeth can include gum disease, crowding, decay, poor position, and cysts.

Since it is not practical for most people to evaluate how their wisdom teeth are developing, the best approach is to visit your dentist for an evaluation. The dentist will review your dental history, take dental x-rays, and perform an examination to determine the general health of your mouth and the condition of your wisdom teeth. If a problem with your wisdom teeth is detected, the dentist may recommend surgery to remove them and eliminate or avoid any unpleasant symptoms. Early removal is best for most patients as it usually helps to avoid more serious problems later on.

It is very important to talk to your dentist about extraction procedure, risks, possible complications and outcomes of the removal of these teeth. The actual extraction may be done by a dentist or it may be referred to a specialist. This decision is based on the dentist’s preference and the unique features of each individual case. If you are unsure about whether or not to proceed with the treatment suggested by your dentist, it is a good idea to get a second opinion. If you decide after consulting with a dentist to not have any teeth extracted, they should be monitored at every dental visit.

Brand-Name Drugs, Generic Drugs, And Illegal Prescription Drugs

If you’ve thought about buying prescription drugs on the internet you may have found the whole experience rather confusing.

– Are generic drugs as good as brand-names?
– Are drug copies such as “generic viagra” safe to use?
– Does it matter if a drug is not “FDA approved”?
– Are you breaking US laws if you buy non-FDA-approved drugs on the internet?

1. What is a Generic Drug?

In the US and many other countries, a “generic” drug is a copy of a brand-name drug. It has identical active ingredients as the brand-name version, and so it is the same as the brand-name version in dosage, safety, strength, quality, performance, and intended use.

A generic version of a brand-name drug is not just similar to its brand-name counterpart. It is identical in all its important characteristics. It must not look like the brand-name version, and it may have a different flavor. But the amount of important active ingredients is the same, and therefore it has the same therapeutic characteristics as its brand-name counterpart.

2. Does every Brand-Name Drug have a Generic Counterpart?

No, every brand-name drug does not have a generic counterpart. This is especially the case with newer drugs such as Viagra, Cialis, and Levitra. These brand-name formulations are patent-protected for 20 years from the date of the submission of the patent. That means that no other drug company can introduce a “generic” version of any of these drugs while its patent is in effect. This allows the original developer of the brand-name drug to recover research and development costs.

When the patent for a specific drug expires, other companies — including the original developer of the brand-name drug — can apply to the FDA to sell generic versions.

This also explains why legitimate generic drugs are cheaper than their brand-name counterparts. A generic manufacturer does not have to recover research and development costs and can therefore sell them for less. This also has a tendency to drive down the price of the brand-name version as well.

3. Do Generic Drugs have to be FDA-Approved?

Yes, all prescription drugs, including all generic drugs must be FDA approved. In order to be sold to the public, generic drugs must pass the same FDA inspections as their brand-name counterparts. They must be manufactured to the same high standards, and the facilities where they are produced are subjected to the same inspections. In fact, an estimated 50 percent of all generic drugs are produced by the same company that produces the brand-name version of the drug.

4. Is there such a thing as a Non-FDA-Approved Generic Drug?

No, technically speaking, there is no such thing as a non-FDA-approved “generic drug.” As outlined above, legitimate “generic” drugs must have the same characteristics as their brand-name counterparts, and must pass through the same FDA approval process in order to be sold to the public.

When an offshore company copies a brand-name drug before its patent expires it cannot get an FDA approval because it is breaking US law.

5. Problems with Offshore Copies of Brand-Name Drugs

There are two major problems with so-called “generic” drugs that are not FDA approved.

– It is illegal to sell these drugs in the US (and other countries) because buyers and sellers are ignoring US and international patent laws

– It is dangerous to buy and use these drugs, because they are not subject to inspection and regulation. According to some sources, “many of these generics are created in unsanitary, make-shift labs and over half of these medications tested are cited for being unsafe for consumption.” In many cases they are found to contain “little to none or too much of the active ingredient.”

6. How Can You Be Sure You are Buying FDA Approved Drugs?

– The website should say “FDA Approved” or “FDA Approved Pharmaceuticals”

– Websites offering “generic” versions of newer drugs such as Viagra, Cialis, Levitra, and Propecia are selling non-FDA-approved versions of these drugs. These drugs have not been around long enough for their patent to have expired, so the “generic” copies are illegal copies.

– Never buy from a website that has no phone number to call or physical address you can verify.
